During the US presidential race of 1828, Democratic candidate, Andrew Jackson, was sometimes called a jack ass by his adversaries. The name stuck. Though unofficially, the donkey is the Democratic Party symbol. The majestic elephant of the Republicans followed the humble donkey.
The rest is history. And it was officially accepted that a political party contesting elections should be identified by a color or a symbol.
